Sometimes you just need to slow down and make a breakfast you know you’ll really enjoy. (We know, we know, who has time? But it really can be a game-changer for your mood. Or hell, make it for dinner on a chilly night. Whatever. You do you. This recipe makes two servings but we won’t judge if you eat them both yourself. Thanks to our friend Andrea Buckett for sharing!)
Banana Bread Oatmeal
3/4 cup large flake oats
1 cup water
3/4 cup milk
1/2 tsp ground cinnamon
Pinch of salt
1 ripe (or over ripe) banana
1 tbsp maple syrup (or honey)
Optional toppings: chopped walnuts, fresh or frozen fruit, flaxseed
1. Pour the oats, water, milk, cinnamon and salt into a medium pot and bring to a simmer. Cook, stirring occasionally, for 6 to 8min, or until the oats have absorbed much of the liquid.
2. Add the banana and maple syrup to a bowl and mash with a fork. Stir the banana mixture into the oats and cook for another 2 to 3min.
3. Divide the oats into two bowls and add whatever toppings your heart desires.
